Hollow Crown produces long, tapered white roots ready for harvesting at around 30 cm. These parsnips, which resemble white carrots, are best harvested in cold weather as it improves their taste. They are cooked in the oven or in mirepoix in soups. Parsnip roots can be stored for a long time in a cool, dry place.
