A small, plump, conical pepper, 5 to 7 cm long, the jalapeño is perfect for adding bite to any recipe. Its strength can vary from medium to very hot. It can be harvested green or when it turns red at maturity. When smoked and dried, it is called chipotle. Degree of hotness on the Scoville scale: 3 – raised – 1000-1500 units
